Tahini Salad Dressing.

Ingredients for a jar:

80ml tahini

5 tbsp water

3 tbsp freshly squeezed lemon or lime juice

1/2 tsp turmeric (ground)

Mix all the ingredients together - (a blender will help to create a smoother texture). Season to taste with salt & pepper and then store in an air-tight jar in the fridge for around 7 days.

I really like to accompany my lunches with a healthy green salad, especially including rocket (the bitterness may support digestion). A delicious, home-made dressing is just the thing to lift your salad to another taste level. 

*Tahini is a good source of plant-based protein, full of healthy fats, it contains calcium and has a range of other potential health supporting benefits.

*As well as containing different minerals, rocket is also rich in folate, vitamins A, C, K and the B vitamins.
